How to choose a combi oven
A combi oven cooks with hot air, steam or a combination of the two, so a single oven can bake, braise and steam. Our range runs from compact 4-level CompaTech ovens to 20-level models for large kitchens.
Ranges
- Level-Up. Electric and gas ovens with touch-screen control: 7–20 levels of GN 1/1 or GN 2/1.
- ProEvo and ProEvo Plus. ProEvo: electric ovens with 5–15 levels of GN 1/1; ProEvo Plus: electric and gas ovens with 7–20 levels of GN 1/1 or GN 2/1. Both are available with either control knobs or a touch screen.
- CompaTech. Only 52 cm wide, with 4–11 levels of GN 1/1 or 4 levels of GN 2/3; the ovens can be stacked.
What to consider
- Capacity. It is stated as the number of levels for GN 1/1 (530 × 325 mm) or GN 2/1 gastronorm containers, or GN 2/3 in the smallest CompaTech ovens. „Inoxtrend“ data sheets also give an indicative number of meals for GN 1/1 ovens: about 70 for 5 levels, 80 for 7, 120 for 10 and 150 for 11.
- Steam generation. Most „Inoxtrend“ ovens make steam by injecting water straight into the chamber; the Level-Up LU BT 120E has a steam generator (boiler) instead, a set-up the manufacturer recommends for large, high-output kitchens.
- Controls. Ovens with control knobs are simpler to operate. Touch-screen ovens store recipes and have a core probe and automatic cleaning as standard. On the ProEvo Plus PPDT and Level-Up ovens we sell, the on-screen menu can be set to Lithuanian — each product page lists exactly what is included.
- Power supply. Electric ovens usually need a 400 V three-phase supply (some smaller CompaTech ovens run on 230 V single-phase). Gas ovens need a gas connection plus electricity for the controls and fan.
- Water and drain. Every combi oven must be connected to a water supply and a drain. „Inoxtrend“ specifies a water hardness of 4–12 °fH (French degrees), so if your water is harder, you will need a softener — see Water filters and softeners.
- Space. The oven sits on a stand or a worktable; in some ranges the smaller ovens can be stacked with a dedicated kit.
This category also includes „Detabinox“ detergent tablets, the DLE hand shower and oven stands; spare parts are listed under Spare parts for Convection Ovens. Models we no longer sell are shown at the end of the list.
